When fire destroyed the renowned Herbfarm Restaurant – rated
one of the top 50 restaurants in the world – Charter was called
upon to recreate the old world charm of the original restaurant in
the newly constructed Willows Lodge. Charter employed a demanding,
fast-track schedule to ensure the new building would be open in time
to honor pre-sold reservations.
The restaurant’s show kitchen features premium commercial
equipment customized to match the country provincial style of the
dining areas. The dining room features post-and-beam construction
with lush colors and details that preserve the exquisite, yet comfortable
feeling of a French country home.
A limited budget didn’t keep Charter from delivering the full
scope of work; complete with high-end, top quality finishes. Crews
implemented extensive value engineering methods and creative financing
to ensure the restaurant’s owners received the restaurant they
had envisioned.
